you ask three chefs what makes a great knife, you'll likely get at least five answers. The truth is that what makes the perfect knife for you will depend on many factors, including your comfort level with knives, the size of your hands, and what sort of food you like to cook.
That said, there's a reason your basic 8-inch chef's knife is ubiquitous: It's the most versatile knife. The chef's knife is capable of dicing veggies, slicing meat, chopping herbs and nuts, and, in a pinch, it'll even go through small bones without too much trouble. There's a bewildering range of chef's knives available, from dirt-cheap to very expensive specialty blades. To help you make sense of it all, we sliced and diced with dozens of knives until a simple truth emerged: A poorly-made $10 blade you sharpen every day is more useful than a $200 blade that's dull. Every knife needs to be sharpened, some just need it more than others. Much of the price difference in knives comes down to the quality of materials, which in turn often translates into how well the blade holds its edge.
We stuck mostly with 8-inch blades, the sweet spot for the classic chef's knife. Testing involved the stuff you'd do in your own kitchen—peeling, filleting, dicing, chopping, cubing, slicing, and all the other standard prep work for meats and vegetables.

The Sora collection brings Shun’s premium cutting experience into a more affordable price range. It’s a step above the entry-level blades in terms of cost, but they are an incredible value, offering materials and performance that are a cut above their competitors.
There are a full range of options available in the lineup, from paring knives to serrated knives and full-size chef and santoku knives.
The blades are unique, and are at the heart of what makes these knives special. You can basically think of them as a jigsaw puzzle - we have a top section and a bottom section that are laser cut for precision and braze welded together, forming a pattern that calls to mind classic Japanese sword hamon lines.
The spine side is a solid piece of high-polished 420J stainless steel which keeps the materials cost down,
But the edge section is where you truly get your money’s worth - by putting high-performance steel right where you need it most, the edge, with laminated steel featuring a VG-10 cutting core.
Shun’s proprietary process is a modern twist on an old blacksmithing trick - seen, for example, with axe makers on the American frontier. Where quality steel was scarce, the cutting bit of the axe head would be embedded in lower quality steel.
Materials aren’t nearly so scarce nowadays, but Shun’s composite blade technology allows them to bring you maximum performance without the high premium usually associated with it. And no need to worry about the durability of the weld - we’ve seen this process before from Kershaw, one of Shun’s sister companies, on blades like the Leek and the Junkyard Dog for years to great success.
The factory edges are extremely sharp right out of the box, and they are sharpened to a very acute 16-degree bevel, making them feel even sharper and cut like a laser
The handle and tang design owes a lot to classic Japanese kitchen cutlery, with a hidden tang and handle shape both updated for a more modern aesthetic. The polymer handles are another way to keep the cost down, but they still feel nice and streamlined in the hand - easy to index in use.
Here we have the Shun Sora 8” Chef Knife, which is a bit more like a Japanese gyuto than it is a typical Western chef knife, with less belly here at the tip meaning you don’t have to raise your wrist quite as much when chopping or mincing.
Popular as a compliment or even a substitute for the chef knife is a good Santoku, and this 7” model comes from my kitchen. I’m usually not a big fan of these scallops behind the edge - they are supposed to help keep food from sticking, but sometimes it is hard to feel the benefit. Not so with this knife, as they are deep enough to truly make a difference.
Both of these larger blades are great all around utensils and are at their best when using it in a push-cut style typical of eastern kitchen knives. The feel of the cuts when using these knives is addictive - there is just so little resistance! - and you’ll probably find yourself looking for recipes that require a little more cutting, just so you get another chance to use the knives.
We’re also fans of the 6” Sora Chef Knife - this one belongs to one of our video producers. It makes a great companion knife, with a little more overall belly than the 8” chef or 7” santoku. This helps it when slicing meat, and I think this one is the best in the Sora lineup when it comes to mincing. Thanks to the curvature it has a nice, gentle landing on the cutting board, making it a joy to use.
Of course, your kitchen wouldn’t be complete without a good paring knife, and I’m a big fan of the Sora 3.5” Paring Knife. The thin, lightweight blade handles with ease - it can be very precise at things like skinning a potato or trimming vegetables or fruit. It even has a little offset to the edge angle, making it easy to use when doing tip-down pull cuts along a cutting board.
Other options to flesh out your Sora collection include block sets, utility knives both serrated and plain edge, and serrated bread knives as well. Everything you need to fully outfit your kitchen.
As you can see, we plainly love these Sora knives from Shun. If you’ve never experienced a truly sharp kitchen knife, it is a game-changing experience, and the Sora knives can cut with some of the best knives out there. Akifusa's Powdered Metallurgical chef's knives have quickly become a favorite at Epicurean Edge. The san mai powdered metallurgical (PM) steel blade is similar to a Western Chef knife with the cutting qualities of the best Japanese-made knives. PM steel is created using a crucible technique and results in smaller grain structure and significantly longer edge holding. The center layer is SRS-15 PM stainless steel originally designed for metal cutting tools. It was hardened to Hrc 64 and is clad on the sides with soft SUS-405 stainless steel. This gives the blade an exceedingly tough, long lasting and chip resist edge that is relatively easy to re-sharpen.
The blade is distal tapered for optimal balance and has an extremely thin, keen edge for high performance.
The 'D' shape handle fits comfortably and securely in the hand and is best used by a right-handed user. It is formed from macassar ebony with a pakkawood ferrule. This wood holds up extremely well in the harsh environment of the kitchen. Like other kitchen knives, this knife should not be put in a dishwasher. The first knife you’ll want to consider will be the centerpiece of your culinary blade kit, the workhorse that is going to get the bulk of your work done. A popular option is the German-style Chef knife. From cutting meat to slicing veggies, there isn’t much you can’t do with a good chef knife at your side.
A popular alternative to the traditional Chef knife is the Eastern-inspired Santoku. Typically a little shorter than the German Chef knives, the sheepsfoot blade is designed for versatility. Generally speaking, while both styles are almost interchangeable, German-style Chef knives tend to be better optimized at rocking motions and slicing meat. The Santoku will usually be nicer when it comes push cuts and chopping vegetables.
No matter which you choose, you’ll probably want something with a blade in the 7-8 inch range. This is large enough to tackle most jobs you’ll need in a home kitchen but is still agile and easy to use. Wusthof and Henckels are by far the recognized leaders of the German style, while Shun and Miyabi carry the torch for the Asian style.
This Wusthof Classic Ikon 8” Chef Knife is one of our favorite German chef knives, which takes the classic forged triple-rivet look and turns up the style. It has a natural feeling handle and is made with nice, tough stainless steel. The edge might not be the longest lasting out there, but it is durable and easy to maintain. Some chef knives come with a full bolster here at the heel of the knife, but the Ikon does not. The edge comes all the way which is going to ensure it can make full contact with your cutting board, especially after it has been resharpened a few times.
For a great example of a Santoku, we love the Shun Classic 7” Santoku. Like many Santoku-style knives, this blade features dimples above the edge which help sticky foods release more easily from the blade. It also has a stabilized Pakkawood handle which looks quite nice and will stand up well to moisture. The star of this knife, however, is the laminated blade, which features a high-performance VG-10 cutting core with Damascus cladding on the sides. The edge itself is sharpened to a narrower angle than the Wusthof for a noticeable improvement in slicing efficiency, but you will have to be a little more careful with the edge on this knife. While it will last longer, it won’t stand up to as much abuse as the Wusthof, such as working around bones or other hard foods.
Of course, if you want to seriously wow with your knife set, you ought to check out the Bob Kramer EUROLine Series from Henckels. There are both Chef and Santoku patterns in this lineup as well as a full range of kitchen knives. While the price may be slightly higher, they have the beauty and performance to justify it. Hand shaped handles, a mosaic pin, and brass hardware mean it looks great, and time-tested 52100 carbon steel offers classic performance that few modern kitchen knives can match. You get a whole lot for your investment.
The next thing you will want is a good serrated bread knife. We like versions with a slight curve to the blade to allow excellent contact with a cutting board, like this Messermeister San Moritz Elite 9” bread knife. Good for more than just your favorite loaf, the serrated edge also makes it great for dealing with soft-skinned foods such as tomatoes, where the serrations will allow you to cut without having to put too much pressure on the food.
Since a boning knife is a tool for getting down and dirty, we are okay with it not being as fancy as the rest of our set. The Victorinox Forschner Fibrox 6” Curved Boning Knife is great for breaking down whole chickens, navigating joints, and deboning large hunks of beef or pork. Its non-slip grip helps maintain a secure hold when dealing with slippery proteins and the stainless blade is both razor sharp and durable. The blade also pulls double duty and makes a decent fillet knife, meaning you can buy whole fish fresher and cheaper if you’re willing to do a little work yourself.
One great option is the Old Hickory 10” Carbon Steel Butcher Knife. This wood handled knife is an American classic. Steeped in history, it feels like an old friend when you use it. The 1095 carbon steel is easy to maintain and holds a fantastic edge, but make sure you clean it promptly after using it to avoid corrosion. The best part about this knife is the price-to-performance ratio. The entire Old Hickory line is very affordable but can perform just as well as knives costing much more. This is a video where I show off the Shun Premier 8" Chef's Knife and explain its features.
Essentially, the Shun Premier is the "flagship" Shun line. It uses VG-MAX Steel (~61 Hardness) sharpened to a 16 degree angle. On top of that, it has 34 layers of steel folded on itself, giving it a beautiful damascus design. Finally, the upper 1/2 or so of the blade is hammered. The end result is a knife that truly is "premier."

Description: The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is more suited for preparation of raw meat as well as use as a general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right.
Kasumi knives are forged in Seki Japan, an area with over 800 years of smithing history. The blade is formed by forging folded layers of soft stainless steel (called a Jigane) around a central core formed from VG10 stainless steel. The central core is tempered to 59 - 60 Rc. This results in an exceptionally keen, long-lasting edge.
The blade is forged quite thin so as to have little or no resistance when cutting through food. Following in the best tradition of knife making, a steel ferrule is forge-welded to the tang to ensure that food particles cannot become lodged between the tang and the handle. Wooden handles are formed from resin impregnated hardwood. These hold up exceptionally well in a demanding kitchen environment.
