There’s no better spread, over slices of baguette or your favourite cracker. Silky and smooth, it’s the perfect appetizer everyone loves. Ideal for dinner parties, cocktail parties, and the festive seasons. Pâté can also make a great food gift, placed in little glass containers.
Make sure your butcher has cleaned the livers. If not, pull out some of the membranes, and look out for any gallbladders, been green in colour, they are easy to spot. Don’t miss any as they are bitter and will ruin the taste.
A good pâté should be smooth, without any lumps and easy to spread. This recipe takes it another step for extra smooth. I use a little bacon in mine, for that hint of smokiness and smoother flavour.
FYI, Pâté also has health benefits, as livers contain vitamin B12 which is commonly deficient, particularly in older people.

If you don’t want shallots for garnish, reduce the amount to 200g
500g chicken livers
1 Tbsp oil for high heat cooking (like canola)
2 Tbsp butter (1 for the livers and 1 for the shallots)
350g sliced shallots
Salt and black pepper
1/4 cup cognac (or any brandy, port, madeira, wine, or stock)
3/4 cups heavy cream
1 tsp balsamic vinegar
Rinse, dry, and trim the chicken livers. Set a large pan (if possible stainless steel) over medium-high heat. Add canola oil and 1 Tbsp of butter. Season the livers with salt and pepper. When the pan is hot, add the livers and cook until golden on both sides, about 2 min per side. I prefer the livers at 150F, which is very pink inside. Remove to a plate.
Reduce heat to low. Add another tablespoon of butter and wait for it to melt. Add the shallots and salt. Cook, stirring occasionally until they begin to brown. When the brown bits on the bottom of the pan become dark, add the cognac and scrape them up to integrate them with the shallots. Continue cooking the shallots, stirring occasionally, until they are very tender and jammy, adding olive oil if the pan feels dry, 15-20 min. Stir in the balsamic vinegar. Taste and correct for salt. Remove about 1/3 of the shallots and reserve for garnish.
Add 1/4 cup of cream and bring to a simmer scraping up the brown bits. If you want your livers more well done, add them to the pan and cook, stirring frequently, until the inside is no longer pink. Cool till warm.
Put the livers, shallots and the remaining 1/2 cup of cream into a blender or food processor and puree until silky smooth. For firmer texture, reduce the cream by 1/4 cup and replace it with 2 Tbsp butter.
Spoon into containers. Press the plastic wrap into the top of the pâté or seal with some clarified butter or chicken fat. Refrigerate overnight. Serve with rewarmed shallots and any fruit jam. It’s also good with pickled shallots and Dijon mustard.

Ever since I was a little girl it was by far what I liked to eat the most when the "adults" got together in my house and I almost didn't share it. This chicken liver paté is almost a legend amongst my friends and that's because it's extremely delicious.

I know it doesn’t look as appetizing as some of my other recipes or food videos but this was pretty good! This Pate had a rich flavor from the butter and a nice and creamy texture from the chicken liver. Like and Subscribe for more!
Season to taste and add as much extra butter as you would like. Optional but adding a thin layer of butter on the top makes it extra delicious! Garnish with freshly chopped Parsley (just the leaves not the stems).

1/8 pound butter

1/2 tsp dried thyme

- 1 Med Onion (cut in half)
- Chicken Fat Rendered (2-5 tablespoons)
- Chicken Skin (optional)
- Minced Garlic (1 teaspoon)
- Mrs. Dash (blend) (1 teaspoon)
- Black Pepper (1 teaspoon)
- Bacon Fat (1 tablespoon) Optional As well
- 4 Green Onions/Scallion
- Mayo (1 teaspoon)
- 2 eggs
Instructions:
- First, you want to do is get 2 things of chicken livers (20. oz), then you want to wash your liver's then you want to put them in a Pan then you want to season your livers with Pepper, garlic powder, Mrs. dash (blend) then add minced garlic.
- After that, you want to cut your medium onion in half. After that you want to add it to the liver's then you want to put it in the oven for about 20-25 at 350 degrees.
- Take out your liver let them cool, after they cool you want to remove the onions and the chicken fat.
- You then want to drain the livers to get rid of the oil. Then you want to add them too your blender
- Blend up your livers and adding green onion/scallion, and add 1 teaspoon of mayo until you want it smooth.
- After it is blended you want to put it in a Tupperware bowl to let it chill for about 12-24 hours. Then you are ready to Serve.

Make a traditional favourite of chicken liver pâté with this easy to follow recipe using the Russell Hobbs Illumina Hand Blender, serves 4
Ingredients
1 tbsp olive oil
2 shallots, peeled and finely chopped
3 sprigs of thyme, leaves removed and finely chopped
1 clove garlic, peeled and crushed
400g chicken livers, trimmed and roughly chopped
Grated nutmeg
Sea salt
White pepper
100ml double cream
120g cubed unsalted butter
To Finish:
80g melted unsalted butter
Step 1: Heat the oil in a frying pan over a medium heat, add the shallots and cook gently for 5 minutes until soft
Step 2: Add the thyme and garlic and cook for a further 2 minutes until fragrant
Step 3: Add the chicken livers to the pan and fry for 2-3 minutes until just cooked through
Step 4: Add grated nutmeg to taste
Step 5: Remove the chicken livers from the pan and place in the beaker
Step 6: Add the cream and stir into the remains in the pan. Bring to a simmer and cook for 2 minutes
Step 7: Pour into the beaker with the chicken livers and blend until smooth
Step 8: Gradually add 120g of cubed unsalted butter and blend until smooth
Step 9: Divide the mixture between four ramekins and smooth the tops down with the back of a warm teaspoon
Step 10: Spoon the melted butter over the pâtés
Step 11: Refrigerate for 1 hour before serving

¾ cup (100g) 10% Milky Cream

HOW TO MAKE Chicken liver Pate:
Cleanse chicken livers from veins and fat
Peel and cut onion and grate carrot
Heat a pan and pour 1 tbsp of olive oil

Place carrot and stew about 10 min with some water
Remove onions and carrot from the pan and pour olive oil in a heated pan
Fry chicken livers over high heat 3-4 min from both sides
Add butter and sear 4-5 min over medium heat

Pâtés are a very typical starter for a French family. I even remember having pâté, bread and cornichons as a starter at the cantine at high school.
This is one of my go to recipe for a ready to go starter it I am hosting a dinner party. Make it the day before in tiny dishes so each guest can have their own dish. The more modern version would be served with caramelised onions and a few leaves of green salad seasoned with French dressing.
Ingredients
Pâté
400gr of chicken livers
300gr of butter
30gr of butter for the shallot
One large shallot
Garlic
Thyme
Salt and pepper
Topping
Enough cheap butter to cover all the dishes
Store in the fridge.
If uncovered, eat on the same day as cooking.

Ingredients:
500 g chicken livers
1 large onion, diced
4 cloves of garlic, minced
1 can of tomato puree
1 spoon of Paprika Paste
Fresh parsley, chopped
Salt and pepper, to taste
Instructions:
Heat a large skillet over medium heat.
Add the diced onions and cook until they are translucent, about 5 minutes.
Add the minced garlic and cook for another 2 minutes.
Season with salt and pepper to taste.
In the same skillet, add the chicken livers and cook until browned on both sides, about 5 minutes per side.
Pour the tomato sauce over the chicken livers and bring the stew to a simmer.
Reduce the heat to low and let the stew cook for another 15 minutes or until the chicken livers are cooked through.
Serve hot with polenta and enjoy!

This recipe consist of a mix of a green leaves salad served with tomatoes, mushrooms, potatoes and croutons. the whole lot is then topped with pan fried chicken livers cooked in garlic and deglazed with Raspberry vinegar. The salad is then dressed with a Raspberry vinegar dressing.
Ingredients for 2 people:
2 handful of mixed salad leaves ( washed and trimmed)
6 chicken livers ( 3 per person)
1 garlic clove ( finely diced)
2 tablespoon of raspberry vinegar ( to deglaze)
5 cherry tomatoes cut in half
2 boiled potatoes (sliced or diced)
100 grams of button mushrooms
1 shallot
1 slice of bread diced and pan fried in oil ( croutons)
For the dressing:
1 pinch of salt and pepper
1 tablespoon of raspberry vinegar
1 teaspoon of dijon mustard
3 tablespoon of sunflower oil (you can also use vegetable oil)
Cooking the chicken livers: medium heat
**In the video I mention 10 minutes but I used large chicken liver**
However, cooking time varies depending on liver sizes. Generally you have to cook the livers 3 to 4 minutes on each side (to get a pink/ rose color) cooked them longer if you like them well done.
Be careful if you cook the livers too much they will become dry.

Chicken Liver Pate Ingredients:
10 Tbs. Unsalted butter, divided
1 Shallot, roughly chopped (approximately 1/4 cup)
3 Cloves garlic, roughly chopped (approximately 1 12/ Tbs.)
8 oz. Ground pork
8 oz. Chicken liver, rinse, drain and scrape the meaty part gently away from the sinew. You will see the webs of sinew and be able to discard them.
1 tsp. Sea salt
1/2 tsp. Black pepper
1 tsp. Fresh thyme, leaves picked

Liver paté…can’t you see the cringe by the organ meat phobic? But, if they would give it a try, their minds what embrace the richness of chicken liver. In this paté recipe, I used the Urthel Samaranth Quad in place of white wine. The result terrine was silky smooth and rich.
Hardware
- ¼ cup Urthel Samaranth Belgian Quad
- 1 lbs. fresh chicken livers, cleaned
- 1 cup milk
- ½ cup unsalted butter, cut into pieces
- 1 cup yellow onion, chopped
- 2 tsp garlic, minced
- 2 TBSP green peppercorns, drained
- 2 bay leaves
- 1 tsp chopped fresh thyme leaves
- ½ tsp kosher salt
- ½ tsp freshly ground black pepper
- French bread toast, accompaniment
Directions
1. In a bowl, soak the livers in the milk for 2 hours. Drain well
2. In a large sauté pan, melt 4 TBSP butter over medium-high heat
3. Add the onions and cook, stirring, until soft, about 3 minutes
4. Add the garlic and cook until fragrant, about 30 seconds
5. Add the chicken livers, 1 TBSP green peppercorns, bay leaves, thyme, salt, and pepper and cook, stirring, until the livers are browned on the outside and still slightly pink on the inside, about 5 minutes
6. Add the Belgian Quad and cook until most of the liquid is evaporated and the livers are cooked through but still tender
7. Remove from the heat and let cool slightly
8. Discard the bay leaves.
9. In a blender, puree the liver mixture
10. Add the remaining butter in pieces and pulse to blend
11. Fold in the remaining 1 TBSP green peppercorns and adjust the seasoning, to taste
12. Pack the pate into small molds
13. Cover with plastic and refrigerate until firm, at least 6 hours
14. Serve with mini toasts on the side.

16oz milk
1/3 cup water
1 onion
2 carrots
1 butter stick
Salt
Seasonings to taste
Soak the cleansed chicken liver (without hearts) in milk or cream for 20 minutes. Fry the onions and carrots for 5-7 minutes, salt and add strained liver. Pour 1/3 glass of water and simmer over low heat, covered for 20 minutes. Then remove the lid and evaporate the liquid. Grind the liver with 1/2 stick of butter, place it in container and let it cool!

This is the original and traditional French country recipe for chicken liver pate'. Our step-by-step video demonstration will show you how to make this creamy chicken liver pate'.
Ingredients
500g Chicken livers
80ml Brandy
90g Unsalted butter
1 Onion, finely chopped
1 Garlic clove, finely chopped
1 Tsp Fresh chopped thyme
60ml Cream
Instructions
Preparation:
Trim away the sinew, fat and discolored parts of the livers, and cut each half liver into 2
Place the livers into a mixing bowl and mix in the brandy. Allow the livers to marinate in the refrigerator for 2-5 hours
Chop the onion, garlic and thyme.
Measure out the butter in 2 lots of 45g
Measure out the cream
To cook the livers
Heat your pan over medium low heat. Add the onions and garlic. Simmer these for 5 minutes until soft and translucent
Drain the livers retaining the brandy
Add the livers and the thyme to the pan and simmer for a further 5 minutes
Pour in the reserved brandy and continue simmering for another 2 minutes
Remove the pan from the heat and allow to cool for 5 minutes
Transfer the livers to a heatproof bowl or pot and blend them until smooth using your stick blender (You can do this in a processor)
Add the butter and blend again until the butter is incorporated and the mixture is smooth
Pour in the cream and stir it by hand until totally incorporated
Pour the pate into ceramic dishes, cover with cling-wrap and allow it to set in your refrigerator for 2-3 hours
